Lemon Bars

One of my most *famous recipes, at least in my neighborhood where I make these for friends, comes from my beloved grandmother. She passed away and I miss her every day, but making these lemon bars makes me feel close to her. Her handwriting was BEAUTIFUL.

Lemon Bars, by my grandmother, Ann Goulding





Mix together with pastry cutter:
1 cup margarine or butter is better (side note, I love that she wrote this)
1/2 cup powdered sugar
2 cups flour

Press into 9x13 pan. Bake at 325° for 15 minutes. Cool.

Beat, and pour on top:
4 eggs, beaten
2 cups sugar
1/4 cup flour
1 teaspoon baking powder
6 tablespoons lemon juice

Bake 20-25 minutes and then sprinkle powdered sugar on top.
